Honey is a biological product made by bees from the nectar of flowers or honey secretions. It is a natural food that does not receive any processing and consists of many ingredients that in total exceed 180.

The simple and complex sugars of honey, minerals, fatty and organic acids, aromatic substances, antibiotics, vitamins, enzymes and other components that coexist in honey and their organic interconnection, give it unique properties.

Flower honey comes from the flower nectar of Greek nature.
 

The rich flora with hundreds of different plant species, many of which are unique in the world, contribute to the production of a honey with a wonderful aroma and light taste.
 

At the same time, the wide variety in the flora provides an equally wide variety of biologically active substances that act synergistically in flower honey and give it a multitude of beneficial properties, which helps to improve the health of the human body.
 

Flower honey is ideal for children, as it contains all the necessary nutrients for a complete diet.
 

 Eucalyptus honey

Eucalyptus honey
Eucalyptus is one of the plants that is usually used in combination with honey as a treatment.

The benefits of the colorless Eucalyptus oil, extracted from its fresh leaves, are reminiscent of honey's "anti-inflammatory, antispasmodic, decongestant, deodorant, antiseptic, antibacterial, and body-stimulating" properties.

In addition to being a very good treatment for respiratory problems, eucalyptus honey is a good antiseptic because it has antimicrobial properties.

Therefore, Eucalyptus honey is used to heal wounds, ulcers, burns, cuts, abrasions and sores.
It is often recommended for patients suffering from rheumatism, back pain, muscle stiffness and ligament and tendon sprains.

It has a yellow transparent color and a delicate and very pleasant taste.

Koumaria honey has a peculiar bittersweet taste and crystallizes quickly. 
 

It contains the substance Arbutin which cleans the blood and regulates the level of cholesterol in it. It contains natural antibiotic substances in a higher percentage than other honeys, as a result of which it is a protective shield for the body against various diseases.
It contains the polysaccharide, tyranose which has been experimentally proven to increase cell life. It contains the enzyme diastase or amylase, which breaks down starch.

Worldwide it is called as the centenary honey because it is rarely produced "almost every 100 years" on the French island of Corsica and is exclusively exported to the rich Arab countries.

In Greece we produce it almost every year in the Peloponnese and Halkidiki and it is a particularly stimulating food for humans and bees.

According to the Institut fur Honig – Analytik in Bremen and Kraft in Munich it contains:
- 0.0% sucrose (common sugar)
- 36.1% fructose
- 28.9 glucose
- 1.7% maltose
- 1% tyranose
- 19.5% moisture
- ph 4.5

Especially because it has a low sugar content, it is also good for diabetics.
